Best Lo Mein Recipe Ever

This low-fat meal is quick and delicious. It is made with ground Chicken, beef or turkey, lots of fresh veggies, ramen noodles, garlic, and ginger. It can be prepared in 17 minutes. It is an all-time favorite and my family asks for it often.

Equipment

  • 1 Wok or large frying pan

Ingredients
  

  • 1 tbsp Sesame Oil
  • 1 pound Ground Turkey, Beef, or Chicken
  • 2 packages Soy Sauce Flavored Ramen Noodles Chicken or Beef Flavored Ramen Works as Well
  • 1 package Chopped Cabbage or Carrots & Cabbage Mixed
  • ½ cup Chopped Green Onions
  • tsp Minced Garlic or 1 tsp garlic powder
  • 3/4 tsp ground ginger or 1 tsp freshly grated ginger root
  • 1 tbsp Sesame Seed (Optional)
  • ¼ to 1/3 cup Soy Sauce
  • 2 tbsp chopped cilantro for garnish (Optional)

Instructions
 

  • 1. Cook ramen noodles according to package directions using one seasoning packet. Reserve 1 seasoning packet for the meat. To avoid soggy ramen use caution not to overcook and drain immediately. I like to add a few additional drops of sesame oil to the ramen to prevent the noodles from sticking together.
    2. Meanwhile, in a wok, heat oil over medium heat for 1 minute, add meat, sesame seeds, ginger, and seasoning packet from the ramen noodles. Add garlic when the meat is partially cooked.
    3. Stir and cook until the meat is no longer pink. Drain if needed.
    4. Stir in cabbage, carrots and green onions.  Cook on medium heat 2-3 minutes until vegetables are crisp-tender. Add ramen noodles to the meat along with soy sauce. Cook 2 minutes longer until heated through and cabbage is tender.
    Garnish with cilantro just before serving if desired.
