Easy Shrimp, Smoked Sausage and Pineapple Skillet

Fresh pineapple chunks, brocoli florets, sliced smoked sausage and shrimp tossed together in a tangy sweet and sour sauce. Served over rice.

Equipment

  • Wok or large frying pan

Ingredients
  

  • 1 pd Large raw shrimp tail and shells removed
  • 1 pkg Smoked pork sausage sliced into 1/4 inch peices, I use Hilshire Farms
  • 1 1/2 cups Fresh pineapple chopped into small bite sized peices
  • 4-5 cups Cooked rice
  • 2 cups Fresh or frozen broccoli florets chopped
  • 1 tsp Minced garlic
  • 1 cup Prepared Sweet and Sour Sauce I used Kikkoman's but any good quality bottled sweet and sour sauce will work
  • 1/2 tsp Crushed red pepper flakes Add more or use less to adjust to how much heat you prefer.

Instructions
 

Cook the Sausage

  • Cook and stir sausage over medium-high heat until lightly browned. Drain fat and return to pan.

Add the Broccoli

  • Add broccoli and cook until crisp-tender. Push to the outside of the pan.

Cook the Shrimp

  • Add shrimp and cook just until shrimp is no longer translucent and is white in color. Use caution not to overcook shrimp. Drain any liquids from the pan if there are any.

Add Remaining Ingredients

  • Add pineapple, garlic, and red pepper flakes (if desired) and sauce and stir well. Cook and stir until heated thoroughly. Serve over cooked rice.

Notes

Smoked Sausage and pineapple SkilletVariations: 1 to 1/2 cups of chopped bell pepper can be substituted for broccoli.
