Easy Sweet and Sour Smoked Sausage and Pineapple Skillet

Fresh pineapple chunks, brocoli florets, or green pepper, sliced smoked sausage tossed together in a tangy sweet and sour sauce. Served over rice.

Equipment

  • Wok or large frying pan

Ingredients

  • 1 pkg Smoked pork sausage sliced into 1/4 inch peices, I use Hilshire Farms
  • 1 1/2 cups Fresh pineapple chopped (can also use unsweetened canned)
  • 4-5 cups Cooked rice
  • 2 cups Fresh or frozen broccoli florets chopped (can substitute 1 green pepper)
  • 1 tsp Minced garlic
  • 1 cup Prepared Sweet and Sour Sauce I used Kikkoman's but any good quality bottled sweet and sour sauce will work
  • 1/2 tsp Crushed red pepper flakes Add more or use less to adjust to how much heat you prefer.
  • 1 pd Large raw shrimp optional

Instructions

Cook the Sausage

  • Cook and stir sausage over medium-high heat until lightly browned. Drain fat and return to pan.

Add the Broccoli

  • Add broccoli or green pepper and cook until crisp-tender. Push to the outside of the pan.

Cook the Shrimp (if using)

  • Add shrimp and cook just until shrimp is no longer translucent and is white in color. Use caution not to overcook shrimp. Drain any liquids from the pan if there are any.

Add Remaining Ingredients

  • Add pineapple, garlic, and red pepper flakes (if desired) and sauce and stir well. Cook and stir until heated thoroughly. Serve over cooked rice.

Notes

Smoked Sausage and pineapple SkilletVariations:   
1 Chopped bell pepper can be substituted for broccoli. 
1-pd shrimp can be added or substituted for the smoked sausage.
1 14-oz can of unsweetened pineapple can be substituted for fresh.
