This Mediterranean garlic shrimp pasta has all the wonderful flavors of a Mediterranean dish, including lots of fresh basil, grape tomatoes, calamata olives, and garlic.

1/3cupolive oil
1lbuncooked large shrimppeeled and deveined
10ozgrape tomatoes sliced in half
1/3cupfresh basilchopped
3garlic clovesminced
12ozRotini or Fettuccinecooked
2tbspchopped green onion
1/3cupblack or Calamata olivessliced in half
salt and freshly ground pepper to taste
freshly grated Parmesan cheesefor topping

Instructions:
Cook pasta according to package directions until Al dente.
Heat olive oil in a large skillet over medium heat.
Add shrimp, sliced tomatoes, basil, Olives, garlic and green onion.
Season with salt and pepper.
Cook just until shrimp turns pink, stirring frequently, about 5 minutes.
Add pasta to the skillet and toss until heated through. Remove from heat.
Top with Parmesan and serve immediately.
Notes
I highly recommend using real garlic cloves in this recipe. It's what takes this dish to the next level.
As the shrimp cooks, you will notice more liquid in the pan. Do not drain. This will become part of the sauce that adds flavor to the pasta.
The shrimp is done cooking when it is no longer translucent and is pink in color. Use caution not to overcook the shrimp or it will become rubbery.
