Doubly Delicious Meatloaf

This meatloaf lives up to its name, and is truly doubly delicious! It is packed with flavor and will undoubtedly have your family asking for seconds.

Equipment

  • 2 1 lb Loaf pans (8.5 in x 4.5 in x 2.5 in)
  • Oven

Ingredients

  • 2 lbs lean ground beef I use 93%
  • 1/2 tsp crushed oregano
  • 1/4 tsp pepper
  • 2 tsp Worcestershire Sauce
  • 1 14oz can of diced tomatoes or tomato sauce
  • 2 eggs
  • 1 1/2 cup breadcrumbs
  • 1 envelope of onion soup mix
  • 3/4 cup ketchup for topping Can use more or less as desired

Instructions

  • Combine all the ingredients except ketchup and mix thoroughly with hands.
  • Distribute evenly in 2 foil-lined loaf pans sprayed with cooking spray.
  • Top each loaf with 1/2 the ketchup, and spread evenly.
  • Bake uncovered at 375 degrees for approximately 50-60 minutes.

Notes

To Freeze 2nd Loaf: Once the meatloaf has cooled completely, wrap one loaf tightly in plastic wrap and then aluminum foil. Place it in the freezer for up to 3 months. When ready to serve, thaw overnight in the refrigerator and reheat in the oven at 350 degrees Fahrenheit until warmed through.
