Doubly Delicious Meatloaf

This delicious meatloaf recipe lives up to its name, and is truly doubly delicious! It is packed with flavor and you will undoubtedly have your family asking for seconds. The oregano, diced tomatoes, and onion soup are the secret ingredients that take this meatloaf to the next level. And of course…the ketchup on top is like the icing on the meatloaf.Ā  It is a classic comfort food that’s always a crowd-pleaser.

This recipe either serves a larger family or if your family totals 5 or fewer members, (especially if some of those members are still little) you can make it a two-for-one meal. Ingredients:

  • 2 pounds lean ground beef
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 2 teaspoons Worcestershire sauce
  • 1 14-ounce can of diced tomatoes or tomato sauce
  • 2 eggs
  • 1 1/2 cups breadcrumbs
  • 1 envelope of onion soup mix
  • 3/4 cup ketchup for topping

 

Instructions For Doubly Delicious Meatloaf:

Combine ingredients: In a large bowl, combine the ground beef, oregano, pepper, Worcestershire sauce, diced tomatoes, eggs, breadcrumbs, and onion soup mix. Mix thoroughly until well combined.

Divide and shape: Divide the mixture evenly between two foil-lined loaf pans that have been sprayed with cooking spray. Shape the mixture into two loaves.

Top with ketchup: Divide the ketchup evenly between the two loaves and spread it evenly over the top.

Bake: Bake the loaves uncovered in a preheated oven at 375 degrees Fahrenheit for approximately 50-60 minutes, or until a meat thermometer inserted into the center reads 160 degrees Fahrenheit.

To Freeze:

Once the meatloaf has cooled completely, wrap one loaf tightly in plastic wrap and then aluminum foil. Place it in the freezer for up to 3 months. When ready to serve, thaw overnight in the refrigerator and reheat in the oven at 350 degrees Fahrenheit until warmed through.

Suggested Side Dishes:

I like to serve this meatloaf with either mashed or baked potatoes. I just pop the potatoes in the microwave to get them baked quickly. I have more time and energy, (which isn’t often) I will make mashed potatoes and serve them with peas. Because to me, meatloaf, potatoes, and peas just go together.

  • 2 1 lb Loaf pans (8.5 in x 4.5 in x 2.5 in)
  • Oven

Ingredients
  

  • 2 lbs lean ground beef I use 93%
  • 1/2 tsp crushed oregano
  • 1/4 tsp pepper
  • 2 tsp Worcestershire Sauce
  • 1 14oz can of diced tomatoes or tomato sauce
  • 2 eggs
  • 1 1/2 cup breadcrumbs
  • 1 envelope of onion soup mix
  • 3/4 cup ketchup for topping Can use more or less as desired

Instructions
 

  • Combine all the ingredients except ketchup and mix thoroughly with hands.
  • Distribute evenly in 2 foil-lined loaf pans sprayed with cooking spray.
  • Top each loaf with 1/2 the ketchup, and spread evenly.
  • Bake uncovered at 375 degrees for approximately 50-60 minutes.
