Chicken

boneless skinless chicken tenderloins

cup
all-purpose flour

tablespoons butter

olive oil
extra virgin
Sauce

soy sauce

honey

lemon juice
Fresh Squeezed

cornstarch

Instructions
Dredge each chicken tenderloin in flour until coated well.
In a large skillet, melt butter and olive oil until hot.
Add chicken and cook over medium heat turning until lightly browned on both sides and no longer pink.
Remove chicken and set aside.
In a small bowl, combine lemon juice, honey, and soy sauce.
Add to pan and stir well.
Combine cornstarch and 2 Tbsp of water and add to sauce.
Cook and stir until thickened.
If the sauce is too thick, add additional water to the pan until it reaches the desired gravy like consistency.
Add chicken back to skillet and carefully coat with glaze.
Stir gently to avoid accidentally breaking the coating off the chicken.
Serve with rice.
Notes
Can also use 4 boneless skinless chicken breasts.
The sauce should be thick enough to coat the chicken well but not so thick that it clumps.
