Ingredients

Chicken

  • 8 boneless skinless chicken tenderloins
  • 1/4 cup all-purpose flour
  • 2 Tbsp tablespoons butter
  • 2 Tbsp olive oil extra virgin

Sauce

  • 1/4 cup soy sauce
  • 2 Tbsp honey
  • 3 Tbsp lemon juice Fresh Squeezed
  • 1 Tbsp cornstarch
  • 2 to 4 Tbsp water

Instructions

  • Dredge each chicken tenderloin in flour until coated well.
  • In a large skillet, melt butter and olive oil until hot.
  • Add chicken and cook over medium heat turning until lightly browned on both sides and no longer pink.
  • Remove chicken and set aside.
  • In a small bowl, combine lemon juice, honey, and soy sauce.
  • Add to pan and stir well.
  • Combine cornstarch and 2 Tbsp of water and add to sauce.
  • Cook and stir until thickened.
  • If the sauce is too thick, add additional water to the pan until it reaches the desired gravy like consistency.
  • Add chicken back to skillet and carefully coat with glaze.
  • Stir gently to avoid accidentally breaking the coating off the chicken.
  • Serve with rice.

Notes

  1. Can also use 4 boneless skinless chicken breasts.
  2. The sauce should be thick enough to coat the chicken well but not so thick that it clumps.
