Easy Beef Stroganoff
Easy Beef Stroganoff
This beef stroganoff with mushrooms is the perfect simple supper for a busy weekday night. With just 5 ingredients, you’ll be surprised at how good it tastes.
I can’t tell you how many times I’ve spent hours messing up the kitchen with a complicated but impressive meal just to sit down at the table and discover that my family is underwhelmed. This creamy, rich and easy Beef Stroganoff is that meal that I throw together the next night because I’m over trying to impress my family.Â
And what happens? They can’t stop raving about this delicious supper that took me less than 10 minutes to toss into the crockpot…
… And suddenly, I am a great cook.
I have been making this super easy beef stroganoff for years. It does not get simpler than this, the stew meat is purchased already chopped so you can just throw it into the crockpot with the other ingredients and forget about it. Â
But don’t be fooled by its simplicity, it really does taste like a meal that I spent a lot of time preparing. It is rich, satisfying, and delicious. A family favorite for sure. I like to serve it with fresh green beans.

Easy Beef Stroganoff Instructions:
Add all ingredients except sour cream to the crockpot and cook on low for 6 – 7 hours, or on high for 3-4 hours until meat is tender. Add sour cream, stir well and cook for 20-30 minutes longer until heated through.
Serve over 12 oz of wide egg noodles cooked according to package directions.
Note:
I use low-fat soups and sour cream but you can substitute with regular fat content ingredients for a creamier consistency.
Double the recipe for a large family.Â
