This easy ADHD-Friendly Beef Stroganoff is the perfect simple supper for a busy weekday night when your neurodivergent brain is overwhelmed. It is prepared in the slow cooker, and with just 5 ingredients, you’ll be surprised at how good it tastes.

I can’t tell you how many times I’ve spent hours messing up the kitchen with a complicated but impressive meal just to sit down at the table and discover that my family is underwhelmed. This creamy, rich, and easy Beef Stroganoff recipe is the meal that I throw together the next night because I’m over trying to impress my family.

And what happens? They can’t stop raving about this delicious supper that took me less than 10 minutes to toss into the crockpot…

… And suddenly, I am a great cook.

I have been making this super-easy beef stroganoff for years. It does not get simpler than this. The stew meat is purchased already chopped, so you can just throw it into the crockpot with the other ingredients and forget about it. This meal won’t destroy your kitchen, and most of the ingredients can be found in your pantry.

But don’t be fooled by its simplicity; it really does taste like a meal that I spent a lot of time preparing.  It is rich, satisfying, and delicious.  A family favorite for sure.  I like to serve it with fresh green beans.

Instructions For Easy Beef Stroganoff Recipe:

Add all ingredients except sour cream to the crockpot and cook on low for 6 – 7 hours, or on high for 3-4 hours until meat is tender. Add sour cream, stir well, and cook for 20-30 minutes longer until heated through.

Serve over 12 oz of wide egg noodles cooked according to package directions.

Note:

I use low-fat soups and sour cream, but you can substitute with regular-fat content ingredients for a creamier consistency.

Easy Beef Stroganoff is an easy and super delicious meal you make in the crockpot and serve over noodles. It is perfect for busy weeknights when you don't have time to fuss over an elaborate meal.

Equipment

  • Crockpot

Ingredients

  • 3 14oz Cans Lowfat or Regular Cream of Mushroom Soup
  • 1 4oz Can Mushrooms Optional
  • 1 Envelope Onion Soup Mix
  • 1 Pound Chopped Beef Stew Meat
  • 1/2 Cup Light or Regular Sour Cream
  • 12 Oz Prepared Wide Egg Noodles

Instructions

Combine Ingredients

  • Combine soups, mushrooms, and onion soup in a slow cooker. Add meat and stir well. Cook on low for 6-7 hours, or on high for 3-4 hours until meat is tender.
  • About 30 before serving, add the sour cream, stir well, and cook on high setting until heated through.
  • Cook egg noodles according to package directions.
  • Serve sauce over wide egg noodles.

I help women and moms with ADHD, but I also help those who struggle with clutter without having ADHD.  Because simplicity and less clutter are always at the heart of staying organized, there is much overlap when it comes to finding solutions to clutter and disorganization.

I am dedicated to keeping my life as simple as possible and to helping others do the same by teaching them how to declutter their homes, simplify their lives, and manage their busy families better.
