Low-Stress, 4 Ingredient Creamy Italian Chicken 

How about a meal that is so easy that you don’t even have to look back at the recipe? Yet still tastes amazing. This ADHD-Friendly, Creamy Italian Chicken recipe is super easy to throw together in a crockpot, or InstaPot, either the night before or in the morning.

It is my go-to for those busy weeknights when I don’t have much time to mess with making dinner or destroying my kitchen with a bunch of dirty pans to wash. It is a quick, rich, and creamy comfort food, packed with flavor.

If you prepare it the night before, just put it in the fridge overnight and put it in the crockpot in the morning. This is a great meal to prepare on a Sunday night and is virtually foolproof.  On Monday morning, you can plug it in, and when you come home in the evening,g it is nearly ready to go!

With just a few simple ingredients and minimal prep time, you’ll have a satisfying dinner on the table in no time.

Creamy Italian Crockpot Chicken and Green Beans

Ingredients:

  • 4 chicken breasts
  • 1 packet Italian dressing seasoning
  • 1/2 cup water
  • 4-ounce block cream cheese, softened
  • 10.5-ounce can cream of chicken soup (I used low-fat)
  • 4 cups cooked rice or pasta ( I used brown rice)

Instructions:

    • Prepare rice or pasta: Cook according to package directions.
    • Prep the chicken: Place the frozen chicken breasts in a crockpot. Season evenly with the Italian dressing seasoning packet.
    • Add the liquid: Pour the water over the chicken breasts.
    • Cook on low: Cook on low for 6-7 hours, or on high for 4-5 hours, or until the chicken is cooked through and tender.
    • Shred the chicken: Shred the chicken using two forks or a hand mixer. Do not drain the juices.
    • Add the creamy sauce: Return the shredded chicken to the crockpot. Add the softened cream cheese and cream of chicken soup. Stir to combine.
    • Simmer: Cook on high for an additional 20 minutes, or until the sauce is heated through and the cream cheese is melted.
    • Serve: Serve the creamy Italian chicken over cooked rice or your favorite pasta.

Equipment

  • 1 Crockpot An Instapot will work as well.
  • 1 Rice Cooker Optional
  • 1 Microwave Optional

Ingredients

  • 4 large chicken breasts
  • 1 Italian dressing seasoning packet
  • 1/2 cup water
  • 1 4oz block of cream cheese I use 1/3 reduced fat
  • 1 10.5oz can cream of chicken soup I use low-fat
  • 4 cups rice cooked according to package directions I use whole grain brown rice.

Instructions

Instructions:

  • Cook rice according to package instructions to make 4 cups cooked rice.
  • Place frozen chicken in a crock pot and season evenly with Italian dressing seasoning packet.
  • Add the water and let cook on low for 6-7 hours or on high for 4-5 hours.
  • When chicken is cooked all the way through and tender, shred it with a fork. Do not drain. A hand mixer works well too.
  • Warm cream cheese in the microwave for 30 seconds, (see note below) and add to crockpot along with the chicken soup.
  • Mix thoroughly and let cook on high for another 20 minutes until warmed through.
  • Serve over rice

I eventually realized that my need for order and simplicity actually stems from having ADHD as a way to compensate for my short attention span. So my gifts and my challenges are all ironically tied together to create who I am,  and I am able to relate to and help others as a result of this coping method that I have developed for myself.

I help women and moms with ADHD, but I also help those who struggle with clutter without having ADHD.  Because simplicity and less clutter are always at the heart of staying organized, there is much overlap when it comes to finding solutions to clutter and disorganization.

I am dedicated to keeping my life as simple as possible and to helping others do the same by teaching them how to declutter their homes, simplify their lives, and manage their busy families better.
